Non stick cookware has become standard equipment in most kitchens, and its convenience is hard to dispute. However, research conducted over many years shows that when heated to high temperatures, non-stick cookware can emit toxic fumes containing chemical compounds that are potentially harmful and possibly carcinogenic. In 2006, after an EPA advisory committee labeled these chemicals "likely carcinogens," manufacturers agreed to limit the amount released during the manufacturing process, and some have voluntarily agreed to remove products containing these chemicals from the marketplace, but despite the known risks, there has been no government action to protect consumers.

The best way to avoid exposure is to use stainless steel, glass, cast iron or enamel-covered cast iron cookware.
